Pickle Jar started the way all good things do — with tradition, quality ingredients, and people who genuinely love feeding others. Nestled inside the Hilton Garden Inn Fredericton Downtown, we’re here for hotel guests, locals, and anyone who believes comfort food should still feel a little special.
Our kitchen is inspired by family recipes passed down through generations, lovingly polished with our Chef’s expertise and just enough modern flair to keep things interesting. Everything is made from scratch, meant to be shared, and served with a smile. At the centre of it all is pickling — one of the oldest tricks in the kitchen. It’s not just about preservation; it’s about adding depth, balance, and that familiar flavour that feels like home… even if you can’t quite put your finger on why.

Every dish at Pickle Jar is made with care, curiosity, and a good pinch of personality. From classic dill to unexpected flavour pairings, our food is designed to feel comforting but never boring. We work in small batches, skip the artificial nonsense, and lean on time-honoured fermentation methods to let ingredients shine.
Our breads are baked fresh — loaves sliced just right for brunch, buns that behave themselves, and English muffins worth waking up for. You’ll also find our house-made marmalade popping up where you least expect it, quietly proving that restraint and ingenuity still have a place at the table. It’s familiar food with a twinkle in its eye.
